Chicken tinga tacos

Pickle onions to serve with our chicken tinga tacos or a similar dish. It's a perfect way to use up onions or make the most of your homegrown produce
Halve and finely slice the onions. Mix with the salt, sugar and the lime juice. Leave to macerate for at lease 30 mins before serving. Will keep in an airtight container in the fridge for a week.
